Carotenoids are a major class of phytochemicals largely abundant in a variety of colorful vegetables and fruits. Beta-carotene is one of the best known out of the 600 naturally occurring carotenoids pigments synthesized by plants and algae. Several of the carotenoids, such as alpha and beta-carotene, are pro-vitamin A compounds. This means they can be converted into vitamin A and retinol in the body.
